Ingredients

  • 1.00 cup (80.000g)    unsweetened shredded coconut
  • 0.50 cup, whole (168.000g)    flaxseed
  • 2.00 scoop(s) (32.400g)    Medi-Weightloss® Vanilla Premium Protein
  • 2.33 cup (30.000g)    Wonderful® Pistachios - No Shells
  • 1.00 cup(s) (200.000g)    Swerve® Sweetener, Granular
  • 2.00 tbsp (14.000g)    avocado oil
  • 0.50 cup(s) (237.000g)    water

Directions

  1. Combine coconut, flaxseed, protein powder, and pistachio kernels in food processor and pulse for about 10 seconds.
  2. In small saucepan, combine avocado oil, water, and Swerve®. Boil for 15 seconds.
  3. Add wet ingredients to dry ingredients and mix.
  4. Using wax paper on baking sheet, flatten and mold mixture evenly into rectangle with 1 inch thickness.
  5. Tightly wrap rectangle mixture in wax paper and freeze for 20 minutes.
  6. Remove wax paper, cut equally into 20 squares, and enjoy!
