Ingredients

  • 8.00 oz (28.350g)    chicken breast(s), boneless and skinless
  • 3.00 cup (30.000g)    spinach, raw
  • 4.00 oz (28.250g)    reduced fat cream cheese
  • 0.33 cup (242.000g)    half and half
  • 3.00 tsp (1.800g)    cajun blackening seasoning
  • 1.00 envelope (20.000g)    Good Seasons Salad Dressing & Recipe Mix, Italian
  • 0.50 cup, shredded (113.000g)    nonfat mozzarella cheese

Directions

  1. Preheat oven to 350 degrees F.
  2. Sprinkle Cajun seasoning over chicken and mix well.
  3. Saute chicken, remove from pan, and then lightly blanch spinach in same pan.
  4. Layer the bottom of a small baking dish with chicken and then spinach.
  5. Add cream cheese, half & half, and Italian dressing mix to sauce pan and stir continuously on medium heat until smooth. Pour over spinach.
  6. Top with shredded cheese.
  7. Bake for 10 minutes, let cool, and enjoy.
